Seafood Porridge / 海鲜粥

Basic and simple seafood porridge to cook. Enjoy!

Ingredients :
01-03 Mackerel, fresh prawns, dried scallop / 干贝
06 Vegetable stock / 全蔬菜高汤 : add in onion, ginger, pasley, leek, carrot, spring onion and celery in a pot, boil til 15mins, add in small portion of light soy sauce, salt & pepper, then filter.

Garnishing :
04-05 Fried dried anchovy / 江鱼仔, fine sliced ginger & spring onion

Seasoning :
Light soya sauce, salt & white pepper powder

Method :
Place vegetable stock and rice in a cooking clay pot, cover and bring to boil. Reduce heat to medium low once the rice becomes porridge. Add in the dried scallop and stir. Add in prawns and mackerel, stir til cooked. Add seasoning to taste.

Add garnishing and sesame oil for serving.

Lemongrass Pork Loin Steak / 柠檬香草猪扒

Very simple recipe for hot sunny day. Enjoy!

Marinade Ingredients :
01-04 - Lemongrass / 柠檬草, coriander / 胡荽, chili, lemon juice, garlic, dried basil, olive oil, salt & pepper > Grind into paste.

Salad & Garnishing :
08-10 Cherry tomato salad, fried potato, lettuce.

Sauce / Gravy :
Home-made plum sauce, salt & pepper, olive oil.

Method :
Place the pork loin steaks in a big flat dishes. Pour marinade ingredients / paste over the top, make sure each steak has been coated well with the marinade. Cover plate with plastic wrap and place in refrigerator for 2 hours.

For salad & other garnishing : Place cherry tomato, finely chopped pasley, chili, lemon juice, olive oil, salt & pepper in a bowl, toss lightly. Cover bowl with plastic wrap and place in refrigerator for 1 hour. For potato, heat up the pan with cooking oil and deep fried diced potato til golden brown.

Heat up the pan and lightly grease with olive oil. Place pork on pan / grill. Cook and turning once until done. Remove pork loin steak from pan. To serve, place portion of lettuce on serving dishes, add pork loin steak, potato and cherry tomoto salad to the side. Top with plum sauce gravy & basil flakes. Ready for serving!
